A Plant Prepped meal that has been transformed into a stuffed Taco Burrito with Avocado! So tasty that you will wish you had a second stomach to have seconds!

Luckily you can look forward to having it for the following day as this recipe is made for two!

Tofu Crunch wrap recipe by Holistic Nutritionist, Rozalia Kieliszkiewicz

Tofu Crunch Wrap stuffed with Avocado.

Ingredients

2 -12 Inch Whole Wheat Tortillas

300 g of Organic Tofu

1 Tbsp of Taco Seasoning (Cumic, coriander, paprika, garlic powder, onion powder, oregano, chili powder)

1 small Onion

2 Garlic Cloves

1 Avocado

1 Lime

10g Cilantro

1 Tomato

4 tbsp Vegan Mayo

1 tbsp of Chipotle Paste

1/2 Vegan cheddar and mozzarella cheese

4 Romaine LEttuce leaves

1 Jalapeno pepper

Grate the Tofu.

Finely chop the onion, garlic, tomato and Cilantro.

Thinly slice the Lettuce and the Jalapeno pepper.

Place the Vegan Mayo in a bowl and mix in the Chipotle Paste and lime juice to taste.


Sprinkle Salt into the pan with Hot Avocado Oil.

Add the Tofu and cook for 5-6 minutes, or until it starts to get crispy. Then, add the garlic, onions, and taco seasoning.

Cook for 4-5 minutes until the Tofu and until it browns.


Place the Lettuce, chopped tomato, onion, jalapeno and Avocado in the middle of the tortilla.

Then add the Tofu Mix and shredded cheese on top.

Fold all corners of the Wrap to make it like a Trapeze shape. Or Star Shape.


When folded, add to the pan on top of sizzling hot avocado oil.

Place the Wrap on the foWrap parts facing down so the oil seals up the wrap.


After 1-Wrapnutes, when presumed sealed, flip over, and let it brown for 30 seconds.

Take off the heat, cut in half and enjoy!


Save the second wrap for the next day or share it with your friend or loved one!
